Super Filling 3-Ingredient Protein Pancakes

I tried this (new for me) version of protein pancakes this morning, and the result was yummy and super filling! Click here for my recipe video.

INGREDIENTS

4 eggs, beaten

1 medium ripe banana, mashed

4 scoops vanilla protein powder (I used Be Well By Kelly)

1/2 teaspoon cinnamon (optional)

DIRECTIONS

  • Combined ingredients well. Batter will be lumpy.

  • Heat pan to medium, melt a generous portion of butter to grease the pan and pour batter in.

  • Once air bubbles appear and start to pop, flip pancake and cook another 2-3 minutes.

  • I topped my pancakes with butter, and they were delicious ( and very filling).

Recipe makes 4 large pancakes. Nutrition info per pancake: 30g protein, 7g carbohydrates, 1g fiber, 5g fat, 198 calories.
