Ranch Parmesan Carrots

INGREDIENTS

1 bag (approximately 1 lb) carrots

Spray oil (olive or avocado preferably)

Ranch Seasoning (I used the Primal Palate brand from Thrive market)

Parmesan cheese

DIRECTIONS

Preheat oven to 400F.

Steam or boil a bag of carrots until they are tender (about 10-12 mins). Strain to dry.

Place carrots on a parchment lined baking sheet and smash until they are flat (I used the back of a serving spoon).

Spray with oil and sprinkle with ranch seasoning and parmesan.

Bake for 12-15 minutes until cheese is melted and carrots are crispy around the edges.

Cool for 5 minutes and enjoy!
