Stuffed Peppers

Ingredients:

4 large peppers, cut in half lengthwise & scooped out

1 lb beef, ground

1⁄2 cup onion, chopped

3 cloves garlic, minced

1 cup mushrooms, sliced

1 large carrot, shredded or chopped

1/2 cup salsa

1 cup riced broccoli (frozen is fine)

2 handfuls baby spinach

1 teaspoon salt

Freshly ground black pepper to taste

1 teaspoon Worcestershire sauce

1 cup cheese, shredded

8 slices thinly sliced cheese

Directions:

1.Cook the pepper halves uncovered in boiling water for about 5 minutes; invert on a towel to drain well, and sprinkle insides of the peppers lightly with salt.

2.In a skillet cook ground beef, onion, garlic, mushrooms, and carrot until meat is browned and vegetables are tender. Drain off excess fat.

3.Add salsa, salt, pepper, riced broccoli, spinach, and Worcestershire. Stir in cheese.

4.Stuff peppers with meat mixture. Place in a baking dish.

5.Lightly cover dish with foil and cook at 350 degrees for 25 minutes. Remove foil, top each pepper with a slice of cheese, and bake for 5 more minutes.
